Happy new year!

I am a happy Vitamix owner these days, I bought myself one for my birthday in December many years ago. A major happy girl splurge, and I have used almost daily since I bought it, worth every single penny. While I used a Vitamix in Culinary School, in restaurants and bakeries where I have worked, it’s different to enjoy it at home making us food. Especially smoothies, it kicks spinach and kale grittiness ass. By the way, this is not an ad for Vitamix, I bought it and love it, so I am sharing my thoughts :). I have never had such a smooth smoothie though, with that alone it’s worth it to me. I drink smoothies with a variety of greens almost daily, so a smooth version of it is better to me. Have you tried beet greens in a smoothie before? They are super duper good for us, very cleansing, and I love to cook with them too. But my old blender didn’t love beets or their greens, so I didn’t enjoy it as often as I would have liked. But I will add, you certainly do not need to have a Vitamix to enjoy this smoothie, or greens like spinach and kale.

Beet Berry Smoothie

I love love love beets with berries in this recipe, they are so good together. And the color, whoa that color. How pretty is that?!!! I added some oranges for good vitamins, and berries for flavor, this tuned out beautifully delicious. While beets have a dirt Earth taste, they are very good. Confession, I used to not like beets. I changes about five years ago and never looked back. Plus peeling them helps with the earthiness, and you don’t lose too many nutrients by peeling them, so it’s all good.

Beet Berry Smoothie

Berry Beet Smoothie

Makes 2 servings

Ingredients:

1 small raw beet, peeled and chopped

1 cup water

2 cups beet greens, or spinach

2 oranges, peeled

1/2 cup mixed frozen berries, I used a blueberry raspberry blackberry frozen mixture

Method:

Add beets and water to blender, blend until smooth. Add greens, oranges, and berries, blend until smooth. Serve cold.

      I honestly had never thought about replacing my container! Thanks for the tip. I wouldn’t go back to a cheap blender ever again, it makes the biggest difference in awesome smoothies. It blends tough greens so much better than the cheap blender. I love adding ginger, beets, and different greens in abundance to make healthy smoothies. I also add parsley sometimes! I hope you are well.
